Back home in the Philippines, cassava leaves with grilled fish, cooked in coconut milk is one of the best dishes to our family. My mother got famous in our circle of friends because of her variety of delicious cooking using coconut milk. This blog is not about cooking using coconut milk. This is about how I make my cassava cake here in The Netherlands, my home away from home.

To add some insight, I googled first about the history of cassava. Cassava appears to have originated in Brazil and Paraguay, but has spread throughout tropical countries in Central and South America. In the Philippines, cassava is one of the well known and one of the most important root crops, but it seems that cassava is a food for the poor. Regardless, me and my family love cassava. In the western countries, cassava is little known or used.

In the Philippines, we buy cassava cake through sidewalk vendors. I love the taste of the cassava with milk and coconut milk. I have thought that making cassava cake is not easy. Until I met a fellow Filipina here in the Netherlands who taught me how to make cassava cake.
She likewise showed me where I can buy a pack of already grated cassava. It is being sold at a Surinamese store in the city. Per pack is one kilo and cost 3.50 euro. After making my first cassava cake, it became one of my specialties considering that my husband loves it, my son likes it, and when we need to prepare something for friends and any get together, it is cassava cake that always come to my mind.

So here now, my cassava cake cooking lesson:
Ingredients: 1 kg grated cassava; 1 big can condensed milk; 350 ml half full milk; 1 big can coconut milk; 300 grams grated cheese (can be old cheese or cheddar, I use both) 100 grams butter (melted) 2 eggs
Procedure:
Put all ingredients in a big bowl and mix. Mix well. Do not forget to grease the form before putting the cassava cake mix there. Put in the oven for one hour at 200 degrees.

That's it! Cassava cake is a good tandem with your coffee. My husband likes it cold, I like it hot. In the Philippines, I don't cook because I do not know how to cook, here in the Netherlands, cooking became one of my hobbies.

Wow, I end up researching on what Cassava was and what was its name in italian or romanian (I am romanian) to see if I ever ate it but no... I never ate it so I have to look for it. Wish me good since here in Italy, the exotic foods are difficult to be found :P
