Garlic eggplant with tuna and mushroom


What I have learned in cooking is, that is also a matter of mix and match.

I miss to write something about food and cooking. I have today a short food/cooking blog, a simple recipe that anyone can follow. Simple but healthy. If you are a vegetarian, this is for you. Garlic eggplant with tuna and mushroom.

What you need:
Butter
Garlic
1 can tuna flakes
2 eggplants
200-300 grams mushroom
Black pepper
for seasoning you can use oyster sauce or fish sauce.

How:
Sauteed the crushed garlic in butter.
Add the shredded eggplant and your choice of seasoning. Cover and lower the heat. When the eggplant is already soft, add the mushroom, mix and cover again. Mix occasionally. When the mushroom is already cooked, add the black pepper and adjust the heat higher. Cook until the dish gets oily. It is best served with rice.

What I have learned in cooking is, it also a matter of mix and match. Enjoy!

Do You Like Carbonara?

As the days go on, I realized and I feel it deep within my heart my passion for cooking. Since the day one of my life in the Netherlands, I can proudly say that my cooking skill gets further, my cooking is really improving. I am glad that I can cook and serve a meal to my satisfaction with my family.
I always cook pasta. Both my husband and son love pasta. But it is my first time to cook carbonara. I found this recipe from the weekly magazine of Hoogvliet Supermarket. I found the recipe simple and easy to cook. I am here to share it with my blog readers.

What you need:
2 bowls of cherry tomatoes, crossed
200 grams smoked bacon cubes
2 cloves garlic, finely minced
2 tbs chopped parsley
6 tbs olive oil
300 grams spaghetti
3 to 4 eggs
100 grams Parmesan cheese
Nutmeg

How:
Preheat the oven at 200 degrees. Place the tomatoes in an oven dish or on a baking sheet and sprinkle with half the olive oil. Sprinkle with salt and pepper and place the tomatoes in the oven for about 15 minutes. In the meantime, fry the bacon cubes in a dry, hot frying pan and add the garlic. Cook the spaghetti according to the directions on the packaging. Beat the eggs, add the cheese and mix well. Add a little pepper and nutmeg. Drain the spaghetti, and put back into the pan. Add the sauce mixture and stir well until a creamy sauce is produced. Add some extra boiling water if it is too dry and let it cook for for a while. Mix the bacon, puffed tomatoes and parsley. Served hot.

Note: this carbonara is also good with seafoods. I eat our carbonara left over with mussels. I cooked the mussels by frying it in a little but, with a lot of crush fresh garlic and a lot of fresh ginger too.

Do You Eat Tofu?

Do you eat tofu? Do you like it? The tofu had a thousand years ago of origin. Wikipedia said that the first tofu-making was first recorded during the Chinese Han dynasty some 2,000 years ago. So Tufo originated in China, and I think most Asian love tofu. In the Philippines, we called it tokwa. It is not just a common ingredient in Filipino dishes, but also a common street food. In the busy streets in Manila, there are food carts and food stalls that sell tokwa't baboy. It is a crispy fried tokwa and pork belly. It is delicious with the dip of a bit spicy vinegar with crushed garlic. In the Netherlands, I also cook tofu. It is a healthy part of my cooking. A pack of tofu in the supermarket is 1.75 euros. I cook tofu with garlic, onion, and tomatoes. Sometimes, I mix tofu with mushrooms, sometimes, with taugé. For my seasoning, I use fish sauce. Why not try tofu on your next cooking? Tofu has a low calorie count and relatively large amounts of protein. The alternative name of tofu is bean curd. Indeed, a healthy food.

Corn With Spinach And Paprika


Corn doesn’t have the same prestige as that some flashier plants do when it comes to health and nutritional value. But this delicious summer food has been a dietary staple for thousands of years, and still enjoys immense popularity the world over. Several myths about corn’s (lack of) health benefits have withered away in recent years, and solid evidence supporting corn’s nutritional value has come to light. -healthfitnessrevolution


I love corn, grilled or just a plain boiled corn. With a bit of an experiment, I have found out that corn is also good with spinach and paprika. A real healthy simple recipe that I love to share. This is how.

Ingredients:
200 grams corn (in a can or a fresh corn)
200 grams spinach
1 pc paprika
200 grams pork belly
Onion
Garlic
Tomatoes
Oil
5 tbs fish sauce
Ground pepper

How:
Heat the pan with the oil and sautéed  the garlic, onion, and tomatoes.
Add the paprika, pork belly, ground pepper, and the fish sauce. Cover the pan for five minutes, then mix. Add the corn and cook in a medium heat until the sauce caramelized. (It takes a longer time to cook if you use a fresh corn) Add the spinach and cook for another three minutes. Serve hot with rice.

Homemade Iced Coffee

I know many of you love ice coffee. I think, McDonald's serve ice coffee. I am not sure of it because as far as I am concerned, I like my coffee hot. My mother in law likes ice coffee instead of dessert.

This is not a late night blog, but a prime-time blog. Hahaha! I am thinking what to write today when all of a sudden, my husband asked me if I like an ice coffee. I said, "yes." As he popped out to make our ice coffee, I grabbed my camera and want to share with my readers my husband's version of ice coffee.
Sugar.
Very strong black coffee.

To cool the coffee.

Scoops of ice cream with Hershey's chocolate toppings.

You need:
3 to 4 teaspoonful of white sugar
2 mini cups of very strong black coffee (1 mini cup of coffee for each glass).
6 scoops of vanilla ice cream (for each glass are 3 scoops)
Hershey's chocolate syrup or toppings
2 large glasses

Here is how:
Mix the sugar and coffee, then cool it by putting in a large bowl with ice cubes.
Scoop the ice cream into the large glass.
Add the coffee mix and mix well.
Adding Hershey's chocolate syrup or toppings is optional.

Promise! This is easy but very delicious even during winter time.

Try This Simple Tuna Omelette

I got this recipe from my niece. She posted the photo on Facebook and it seem delicious. I always love tuna, and any food with an egg. So tuna omelette has egg. I asked her how to make her tuna omelette. After my first try, it became one of my favorites. Simple dish, easy, and healthy.

You need:
1 can tuna (drained well)
2 eggs
2 tbs flour
1 medium size onion, chopped
1/2 tsp powdered garlic
1 tsp salt
Pepper
Oil

Procedure:
Mix all the ingredients in a bowl.
Mix well.
Heat the pan with the oil.
Use a big spoon to put the mix in the pan.
Spread it, make them flat and circle like a pancake.
Cook on medium heat, for about 3-5 minutes each side.
Serve hot with rice, but this is also good with bread.
For garnish, I like it with pickles and cocktail onions, like what you
can see in the photo.

Health benefits in eating tuna: tuna fish is good for the heart, it has very high levels of omega-3 fatty acids, which help to reduce omega-6 fatty acids and cholesterol in the arteries and blood vessels. Tuna is among the world's healthiest foods.

A Simple Butter Cake Recipe

nothing taste better than a home made cake or bread.
I have found out that cooking is also an art. You can cook a dish complicated or simple. But there are simple dishes that are also delicious and of health value. Before I sign off, I would like to leave a simple recipe, butter cake.
I saw this on my file and I remember it was my husband who baked this cake, but I noted the ingredients and the procedure so I can follow the next time. This is a good match for your coffee or tea.


Ingredients:
250 grams flour
15o grams sugar
250 grams butter
a little salt
1 egg. Yes, just need one egg:)

Procedure:
Mix well all the ingredients.
Mix the egg separately, use half portion for the mix/mixing and the other half for the topping ready for oven.
Bake in 180 degrees for 20 minutes.

My One Pot Chicken Pasta

Good morning to all. I am sharing with you again one of my cooking. This is a simple pasta recipe that I cooked last night. I saw the recipe on the Internet, after my first try, it is now one of my regular menus that my husband and my son love. This is my one pot chicken pasta. One pot because this is not the complicated pasta recipe, fast and easy in just one pot.
I recommend this pasta for this dish.

heavy cream, powdered garlic, and bouillon.

parmesan on the top, ready to cook now.


Ingredient:
250-300 grams pasta
250 grams chicken breast cut into cubes (you can precook it or not. Me, I fry it separately)
80 grams Parmesan cheese
2 cups bouillon
2 cups heavy cream
1 tsp powdered garlic

Procedure:
Put all ingredients in a large pot and cover. Pasta is fast to cook, make sure it will not become burned. Cook for 10 to 12 minutes in a maximum heat with frequent mixing. Serve with steamed broccoli.

This is good for two to three persons. You can adjust the amount of ingredients for more serving.
