Homemade Spaghetti Meatballs
When you say meatballs, probably you will think those meatballs being served in the restaurants. I love the meatballs in Sbarro, an Italian Restaurant in the Philippines that me and my family are a regular customer when we are having a holiday. Shakey's and Pizza Hut are also serving meatballs on their spaghetti. Shakey's has this "monster spaghetti meatballs."
At home, I have learned how to make our own spaghetti meatballs. Before, it was my husband who was doing it. But because I take my cooking seriously, I learned to do it myself. My son loves spaghetti and I love making spaghetti meatballs for my family.
I make just a simple meatballs, I love simple cooking, the simpler the dish, the more it tastes homemade, hearty. I use ground beef, I use my hands in mashing the meat together with the other ingredients. Yes, to make a good formed meatballs, using your hands is needed.
In 500 grams ground beef, mix it with one egg, a bit flour, black pepper, and some people add some herbs like coriander and parsley. You can use salt taste, but you can also use other available seasoning. I have learned that kitchen life is a kind of discovering and experimenting. I am glad that I come to love cooking now, it contributes a lot to the happy atmosphere of our home.

Cooking Chile Con Carne

I invited my mother in law to join in our dinner and I am happy that she liked my cooking. Here is how I cooked my chile con carne:
| 150 ml water |
| tomato blocks, black beans, and the chile con carne mix |
| red onion and red paprika |
| ground beef |
Ingredients:
500 grams ground beef
medium size onion.
1 piece paprika
390 grams Heinz tomato blocks
400 grams black beans
Chile Con Carne mix
150 ml water
1 tbsp oil
Procedure:
Heat the pan with oil. Cook the ground beef until the meat turned brown. Add the onion, paprika, 150 ml water, and the chile con carne mix. Cook for around 10 minutes, then add the black beans, make sure you drain the water. Mix well and turn the stove on medium heat, do not cover because it will become watery. Mix occasionally. You know it is done when it is a bit sticky and the black beans are already cooked. Serve hot with rice.

My Chicken Pie With Ham, Prie And Nasi Goring Spice Mix

Crust ingredients and procedure:
100 grams melted butter
50 ml water
1 tsp salt
1 tbsp sugar
12-20 tablespoons fluor
1 egg

| you will know if the dough is good by feeling its texture. Use your instinct :) |
Put in the mixer all the ingredients. At first, put only about 10-12 tablespoons flour. You just add more depends on the texture of the crust. You will know that it is already good if the crust don't stick to your hands. It is a bit greasy, firm and not sticky. Put the crust in the fridge for about thirty minutes. Start now to cook the filling.
Filling:
300 grams chopped prie
250 grams chicken
200 grams ham
6 eggs
150 grams grated cheese
Fry the chicken, then add the prie. Add the nasi goreng spice mix and mix well.
Let it remain in the pan while making the crust.

Kneading:
Knead the dough in à flat, clean and dry surface using rolling pin. I knead my pie crust in our granite countertop. Don't forget to sprinkle flour on the countertop before kneading so the dough will not stick. Sprinkle flour to the both sides of the dough. Knead from the middle of the dough so it will get even. Grease butter in the form and sprinkle flour, so the pie will not stick in the form. Put the dough in the form carefully. Cut the excess and knead it for pie cover. Knead. When it is already done and even, place the form at the top so you can cut it circle for pie cover.

In a bowl, mix the six eggs together with the grated cheese. Pour it to the cooked filling. Then move the complete filling to the dough or the pie crust. Put the circle dough covering, then overlap the edge of the pie crust. Use a toothpick to put some small hole at the top of the pie, so it will not explode in the oven. Put in the oven for 30 minutes in 200 degrees heat.

Cooking Singaporean Laksa

From that time, I start to crave for laksa, how it tastes, its smell, and it is a nice thing to eat something from another Asian country. I checked on the internet where I can eat laksa here in The Netherlands. I found on Trip Advisor and it is a restaurant in Amsterdam. It is not practical for me to travel in Amsterdam just to eat laksa. So I decided to just find a laksa recipe. But I cannot make laksa if I don't have the laksa paste.

I went to Surinamese store and to a Turkish store here in our city, but they don't have laksa paste. I was about losing hope to taste laksa when I saw a brown pack stacked together with the noodles, coconut milk, and spices at the supermarket where I always shop. The bold label says it all: Singapore Laksa Paste! So that was it! I can cook now my own laksa.

The laksa recipe on the Masterchef has more or less twenty ingredients. But the laksa paste that I buy in the nearby supermarket has the simplest and easy to cook laksa recipe printed on the label. I saw on the Internet that there are many laksa recipes, depends on your budget and your time to cook. I don't like those complex recipes. I prefer a recipe that is good in my budget and you will never doubt that it is homemade.
So here I am now, sharing again my cooking.
Ingredients:
250 grams rice noodles (in Tagalog bihon, in Dutch mihoen)
50 to 80 grams laksa paste
200 grams chicken
200 grams shrimp
200 grams tauge
1 medium size onion
1 or 2 red chili
1 big can coconut milk
100 ml water
For the garnish:
Slices of cucumber

Procedure:
Since it takes only 4 to 6 minutes to cook the rice noodles, cook the rice noodles when the laksa sauce is done. Cook the rice noodles according to the instruction at the label.
Heat the pan with one tablespoon oil. Fry the chicken for around 5 minutes. Then add the shrimp, cook for another three minutes or as the shrimp turn pinkish. Add the onion and cook for one minute. Add the coconut milk, water, and the laksa paste. Stir, cover and let it simmer for about 20 minutes. Then add the tauge and the red chili. Let it simmer again until the tauge is already cooked. Let it simmer until the sauce gets a bit oily or greasy.

This is the only time that I tasted rice noodles cooked in coconut milk. I love the taste of this Singaporean Laksa. I think one of the things that we must be thankful for is, that God gave us the taste bud and the variety of food. We eat not only because it is a necessity. We cook, we eat because it is enjoyable too! Happy dinner to all!

My Cooking Today: Baked Macaroni With Pepperoni

While I am cooking this today, I made only one photo for my Instagram account. That one became two, and I just decided it to be my blog today. Maybe other food bloggers have someone with them to make photos while they are cooking, me I did it alone. I was all sweating, cooking and making photos simultaneously. Hahaha! But it was really fun!

The original recipe is macaroni. Since I don't have macaroni this time, I used the pipe. You must follow the instruction in cooking the pasta that you would like to use.
Ingredients:
300 grams macaroni
50 grams butter
1 cup chopped parsley
1 teaspoon powdered garlic. A crushed fresh garlic can also do.
1cup chopped pepperoni
250 ml full milk
125 grams cheddar cheese
250 grams mozzarella cheese (divide it into 2 125 grams each. 125 grams for cooking, the 125 grams for the toppings when you will already bake the pasta.
2 tablespoon flour

Procedure:
Cook first the macaroni.
Heat the pan with the butter.
Sauté the pepperoni, powdered garlic, and the parsley for about 2 minutes. Much cooking can make it salty because of the salty pepperoni.
Add the flour, cheddar cheese, and the mozzarella cheese. Mix them continously. Once it became a bit sticky put the cooked macaroni. Mix well and then put in an oven pan.
Put some slice uncooked pepperoni on the top together with the remaining mozzarella cheese. Put in the oven for 20 minutes in 200 degrees heat.
